Ok, so due to lack of computer for a couple weeks, neither of us posted much. But that is no excuse for the weeks that we’ve been back online and have simply not posted. Hopefully we’ll be able to get back in the swing of things.
As of a couple weeks ago I’m searching for a job. Yay, lucky me right? So far I’m really looking into a position at GCC that I think would fit our needs and my talents well. Prayers about that would be greatly appreciated.
I’m also thinking about what I want to post about regularly. Do I make it everyday life stuff, do I make it like a journal, do I post fun silly things…or maybe a little of everything. Right now my life isn’t that exciting. Interesting, but not exciting.
Here’s something that my good friend Jim gave me…it comes from a Cooking for 2 book that he gave me:
Crunchy Peanut Butter Tarts = yuummm
2- ounces cream cheese, softened
1/4- cup chunky peanut butter
2- tbs sugar
2- tbs sour cream
1/4- tsp vanilla extract
2- individual graham cracker tart shells
2- tbs whipped topping
Chopped peanuts optional
In a small mixing bowl, beat the cream cheese, peanut butter and sugar until blended. Stir in sour cream and vanilla. Spoon into tart shells. Refrigerate for at least one hour. Top with whipped topping. Sprinkle with peanuts if desired. (I like to add a little bit of chocolate to this by putting a few chocolate chips on the pie crust before adding the filling)
This recipe is very good. Arthur loves it :). And obviously you can double or triple it to make more than two little pies.

Ok, I have no idea who I’m voting for in the election that is 11 months away. I don’t like any of the candidates. Seriously, I can’t see myself as voting for any of them. One of the biggest reasons is trust. I don’t trust any of them. Their past actions and how they behave now gives me no confidence that they will do what they say they will do. I believe that each one could look me in the eye and tell me a bold-faced lie, tell me something based on ignorance while trying to sound nonchalant and witty, tell me something I don’t want to hear, spend lots of money we don’t have, become even more dependent and/or open with other countries, say they’ll build a fence but won’t (how many years since Reagan has it been and there is still no bloody fence?), lie cheat and bully to get what they want, rely on “good looks” and shady experience, or not answer questions directly but instead use that question as an attack on another candidate…and the list goes on. To quote Charlie Brown, “I just can’t stand it.”

There has been so much going on this Christmas and New Year season that it’s been hard to enjoy it. Sadly it has not been filled with much peace and relaxation. For so many reasons, including being sick with miserable colds, we’ve both found this Holiday Season to be challenging. I hope we’ve come out of it stronger and for the better, but I’m finding that hard to imagine. It’s been filled with good times for sure, but also some arguments and disagreements thrown in to make it not so much fun. But we survived and life goes on, with many lessons learned.
Jon and Shannon are back from Dubai for a few weeks, but then are off to China for a year. It’s been great to hang out with them a bit while they’ve been here. Josh and Katie came up from Virginia for New Years and we had the traditionaly party at home. Doc got married the Saturday after Christmas. And Andrew and Becky came out for a visit and the wedding. Schenley, Nick and Angela came out too. We finally made it down to Arthur’s parents last night, and battled the raging weather all the way home. It’s a good thing Arthur is an excellent driver…
It’s hard to believe it is 2008, it seems so much like 2007. But then, it is only 2 days old. I’ve made no resolutions this year because as life changes so do my resolve and my priorities. I wish everyone a better year than last year! If you had a wonderful year, make this one better! If you had a sucky year, there’s hope for you too!
